Ingredients
- ½Kg calamari cleaned and cut into thin rings
- Small green pepper Horn, chopped
- Red pepper Horn clip rings
- ½Cup green lemon juice
- 3 tablespoons chopped green onions
- 2 tablespoons coconut milk
- 1 tablespoon fish sauce, or to taste
- 1 tablespoon rice vinegar
- Teaspoon sugar
- 2 tablespoons vegetable oil
- 2⁄3 cup unsweetened roasted coconut
- ½Cup chopped coriander
- Teaspoon green lemon juice
Method of preparation
- Mix the calamari with green and red pepper, lemon juice, two tablespoons of green onions, coconut milk, fish sauce, rice vinegar and sugar in a large bowl. Cover with nylon and put in the refrigerator 2-3 hours. Pour the mixture into a strainer until drained about 5 minutes. Get rid of the liquid.
- Heat the oil in a large skillet over high heat until smoke oil. Cook the calamari mixture in the hot oil until the calamari is white, about a minute. Pour into a serving dish and refrigerate at room temperature. Cover and refrigerate for an hour.
- Stir the calamari and any juice accumulated in the bowl. Add the coconut, coriander, the rest of the green onions and lemon juice, stir.
