Ingredients
- 1 pound peeled and sliced carrots
- 2 cups water
- 2 cloves garlic mashed
- 2 tbsp olive oil
- ½Teaspoon sweet paprika
- 1 pinch red hot pepper
- Salt and ground black pepper to taste
- 1 tablespoon vinegar
- ½Teaspoon ground cumin
- ½Cup coriander leaves
Method of preparation
- Mix carrots, water, garlic, olive oil, paprika, red hot pepper, salt and black pepper and bring to a boil over medium to high heat .
- Let the ingredients boil for 20 minutes until the carrots are tender and the water evaporates completely .
- On top of the carrot mix put both vinegar and cumin and stir until all the ingredients and flavors mix well together .
- We remove the saucepan from the fire and set aside until the salad cools at room temperature .
- Put the spicy Moroccan carrot salad in the dish, garnish with coriander and then ready to serve .
