Ingredients
- 3 roasted eggplant
- 2 chopped tomatoes
- 2 cucumber slices
- 1 onion chopped
- 2 cloves garlic mashed
- 2 pieces of chopped green pepper
- 1 tsp chopped red hot pepper
- ½Cup finely chopped parsley
- 4 tbsp olive oil
- ½Cup pomegranate molasses (or juice of 2 lemons)
- Pinch of salt
- ½Teaspoon cumin
Method of preparation
- Heat the oven to 220 C, put the eggplant in the oven tray and roast for 20-25 minutes until soft .
- Cut the vegetables i.e. tomatoes, cucumbers, green and red peppers, onions, put them in a bowl, then add the mashed garlic and parsley on top and stir until well mixed .
- We grilled eggplant and we cut then add it on top of the vegetables with the olive oil, pomegranate molasses, salt and cumin and stir until all safety components together perfectly .
- Put the salad in serving plates and garnish with parsley so it is ready to serve .
