How to make grilled zucchini salad

Grilled zucchini salad, a delicious toasted dish of olive oil-roasted zucchini circles with greased toast with chickpeas, crumbled cheese and arugula, then put the zucchini on top and serve hot.

  • - 4 small zucchini, cut into circles 1.25 cm thick
  • - 2 tbsp olive oil
  • - The coarse salt
  • - 4 loaves of bread
  • - ½Cup chickpeas
  • - ½Cup of crumbled goat cheese
  • - 2 cups of small arugula
  • - 1/4 cup almonds, chopped
  • - 1 lemon to serve

Method of preparation

  1. Prepare the oven at 200 C. Put the zucchini on a tray, sprinkle with olive oil and then a teaspoon of salt. Mix them thoroughly and stretch them with one layer. Roast them in the oven until browned and tender for about 30 minutes, and you can stir them in the middle of the time.
  2. Heat the bread on the grill until it is toasted beautifully but remains soft. Then spread 1 tablespoon of chickpeas over each loaf of bread and then a tablespoon of crumbled cheese. Arugula, a quarter of the amount of roasted zucchini and 1 tablespoon of almonds. Serve them with lemon triangles.
