Ingredients
- 1 cucumber slice
- 2 boiled potatoes, sliced
- 1 red, yellow and green bell pepper, cut into longitudinal slices
- ½Cup black and green olives
- Salt to taste
- 3 cloves garlic, chopped
- 3 chopped green onions
- 4 tbsp olive oil
- 1 tablespoon apple cider vinegar
- Juice ½ lemon
- 1 tbsp chopped fresh mint
- 1 tablespoon chopped fresh coriander
Method of preparation
- Arrange cucumber slices, boiled potatoes and colored peppers in a serving dish and put olives in the middle .
- Sprinkle salt to taste, taking into account that olive oil contains the salinity also .
- Sprinkle garlic, onion, olive oil, vinegar and lemon juice over the salad .
- Put the salad bowl in the fridge for at least an hour until the flavors are well combined .
- Before serving decorate the salad with mint leaves and chopped cilantro .
