Boiled potato salad with mayonnaise, this mashed potato salad is distinguished from others by the delicious creamy sauce of mayonnaise, mustard and hot sauce as well as green onions and useful herbs .

Ingredients
- 2 lbs sweet potatoes, 1 ½ inch chopped
- 1 lemon zest and juice
- 2 tsp fresh rosemary chopped
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- Hot sauce to taste
- ½Cup olive oil
- 2 tbsp mayonnaise, sour cream or fresh cream
- 1 tablespoon mustard
- ½Cup finely chopped green onion
- ½Cup chopped parsley
- 2 tbsp chopped basil
Method of preparation
- Boil the potatoes in salted water until tender for about 15-22 minutes and then drain completely .
- Mix in a bowl both Borsch, lemon juice, rosemary, salt, pepper and hot sauce, stir and add olive oil, mayonnaise and mustard .
- Put the potatoes in the bowl, mix all the ingredients until completely mixed and then mash a few pieces of potatoes a little.
- Add the green onions and parsley to the salad, stir well, put in a serving dish, garnish with basil and serve at room temperature .
