Salad of arugula, beetroot, featuring orange salad and beetroot as great in the fall they are rich in flavours and delicious, fresh and health in addition to that the preparation is easy and doesn't take time at all as the sauce which consists of orange juice and Dijon mustard tastes very special .

Ingredients
- To prepare salad:
- 2 peeled and diced red beets
- 1 medium-sized orange, peeled and diced
- ½Small red onion, sliced
- 5 cups green leaves (such as watercress, spinach etc.)
- ½Cup chopped pistachio
- To prepare the sauce:
- 3 tbsp fresh orange juice
- 1 tablespoon lemon juice
- 3 tbsp olive oil
- 1 tablespoon Dijon mustard
- Salt and black pepper to taste
Method of preparation
- Put water in a bowl, let it boil, add beetroot and boil for 5-8 minutes or until cooked and set aside .
- In a large bowl we add all the salad ingredients along with the boiled beetroot . In another bowl, mix the orange juice, lemon, olive oil, dijon mustard, salt and pepper and stir until the ingredients are well combined . Mix constantly when gradually adding oil, taste the sauce and add spices to taste .
- Pour the sauce over the rest of the ingredients and stir until ingredients are mixed well with the sauce and then distribute them to serving dishes .
