Salmon salad with spinach and sweet potatoes is very nutritious and delicious with many delicious ingredients in addition to a distinctive sauce of butter, shallots, mustard and vinegar .

Ingredients
- 1 lb sweet potato
- Salt and black pepper to taste
- 1 salmon fillet (1 lb)
- 6 tbsp unsalted butter
- 2 tbsp chopped leeks
- 1 teaspoon Dijon mustard
- 3 tbsp vinegar
- Half kg chopped spinach
- ½Cup mint leaves
- Sea salt for serving
Method of preparation
- Mix the potatoes with 1 tbsp salt in a large saucepan, cover with water and boil with boiling water for 10-12 minutes, then half and set aside .
- Season the fish with salt and pepper, put it in a saucepan, immerse it in water, let it boil, then remove it from the fire, cover the pot and let the fish simmer on the heat of water for 5-7 minutes and then transfer it to a plate aside .
- We begin to prepare the sauce, melt the butter in a pan over medium to high heat and when it boils, reduce the heat and simmer, stirring constantly, until golden for 2-7 minutes .
- Keep the pan from the heat and add the shallot, mustard, vinegar, salt and pepper .
- Cut the potatoes in half, add spinach, mint, two-thirds of the sauce and spread the ingredients on 4 plates to serve .
- Season the fish with the rest of the sauce, spread it on serving plates, sprinkle with sea salt and serve .
