Lemon spinach salad, a wonderful summer vegetable salad rich in lots of healthy food ingredients from potatoes to spinach, garlic, rosemary, mayonnaise, olive oil, peel and lemon juice.

Ingredients
- - 1 kg of golden potatoes
- - 2½ tablespoons olive oil
- - ½Teaspoon dry and ground Rosemary
- - ½Teaspoon salt
- - ½Cup light mayonnaise
- - 1 teaspoon grated lemon peel
- - 1 and a half tablespoons of lemon juice
- - 1 and a half tablespoons of water
- - 1 clove of garlic
- - 5 cups spinach
- - ½Cup Parmesan cheese
- - Freshly ground pepper
Method of preparation
- Preheat the oven to 225C, and on a large tray stir the potatoes, oil, rosemary, and salt until the potatoes are evenly covered.
