  • To prepare asparagus:
  • 1⁄2 lb asparagus
  • 1 tablespoon olive oil

  • To prepare salad:
  • 1 cup cherry tomatoes, cut in halves
  • ½Medium-sized red onion, chopped
  • 1 cup chopped yellow peppers
  • 1 cup chopped cucumber
  • 1 cup Greek purple Kalamata olives
  • 1 tablespoon feta cheese
  • To prepare the sauce:
  • 1 tablespoon fresh lemon juice
  • 2 tbsp olive oil
  • 1 clove of garlic
  • Salt and ground black pepper to taste

Method of preparation

  1. We protect the oven to a temperature of 220 . Cut the stiff ends of the asparagus and put it on the oven tray in the form of a single layer . Add olive oil, salt and pepper and tell her good .
  2. Roast asparagus for 12-15 minutes, then let cool, cut and set aside . In the meantime we begin to prepare the sauce, put the lemon juice and olive oil in a bowl, stir, then add salt, pepper and garlic and stir well .
  3. Put all the salad ingredients in the serving dish, add the asparagus, pour the sauce and stir until the ingredients are homogeneous . Decorate with feta cheese and the Greek salad is ready to serve .
