
This barley salad is nutritious, rich in benefits and delicious vegetables and is made from uncooked cauliflower (flower) which tastes great when it absorbs the flavors in the salad with the rest of the vegetables .

Ingredients
- 150 g peeled barley
- 2 peeled oranges
- Juice and 1 lemon zest
- 1 tablespoon olive oil
- 2 tsp maple syrup
- 250 g cauliflower
- 1 piece of zucchini
- 2 celery sticks
- 2 green onions
- 280 g carrots
- ½Cup dried berries
- ½Cup fresh mint
- ½Cup fresh coriander
- 2 tbsp roasted pine nuts
- 200 g feta cheese
- For decorating
- Olive oil
- Mint leaves
- Coriander
Method of preparation
Put the barley in a bowl, immerse it in cold water and let it boil over high heat . Then leave on low heat, stirring for 30 minutes, then half, put under cold water, half well and set aside in a bowl .
Cut the oranges and keep the juice that comes out during the slicing . Mix orange juice, lemon oil and maple syrup in a bowl . Cut the cauliflower, add to the juices with the zucchini and leave the ingredients aside for 5 minutes until the flavors blend .
Add the orange pieces, lemon, celery, green onions, carrots, raspberries, zucchini mixture and ½ of herbs to the barley and stir until all the ingredients are well combined . Keep the peace in a serving dish and decorate the pine-roasted feta cheese with a little olive oil and the rest of the herbs .
