Ingredients
- 4 eggs
- 1 cup brown sugar (or white)
- 2 cup carrot sprinkles
- 1 cup of chopped walnuts
- 1 ½ cup vegetable oil
- 1 or 2 tsp ground cinnamon to taste
- 1 ½ teaspoon baking powder
- 1 teaspoon Peking soda
- Pinch of salt
- 1 teaspoon vanilla
- 2 cups flour
Method of preparation
- Heat the oven to 180 degrees and then put the butter paper in the cake mold and grease it .
- Sift dry ingredients i.e. flour, salt, Peking powder, Peking soda and cinnamon, mix and set aside .
- Put the eggs in a bowl and beat well, then add sugar and vanilla and beat with an electric whisk until the mixture rises and becomes light .
- Gradually add the oil and continue whisking until the ingredients are mixed .
- Sprinkle with carrots and walnuts, stir with a spoon, then add the dry ingredients and stir with one side from the bottom up without using the whisk .
- Put the cake mix in the mold and put in the oven for about 35-40 minutes until cooked .
- Set aside the carrot and walnut cake to cool and ready to serve .
