Ingredients
- 4-5 cups arugula
- 1 cup boiled sweet potatoes
- 3 Tbsp feta cheese
- 2 tbsp milk pistachios
- 2 boiled eggs
- Salt and ground black pepper to taste
- To prepare the sauce
- 1 clove of garlic mashed
- 1 teaspoon mustard
- 2 tbsp lemon juice or vinegar
- ½Teaspoon salt
- ½Teaspoon ground black pepper
- 6 tbsp olive oil
Method of preparation
- We put the sweet potatoes in a saucepan, immerse them in water and boil them . In a large bowl, mix watercress, boiled sweet potatoes, feta cheese and pistachios .
- Before serving, begin by sauce, creating each of the garlic, mustard, lemon juice, salt, pepper, olive oil, and stir until ingredients are completely combined .
- Add the sauce that we have prepared and stir until all the ingredients are well combined . Put the salad in a serving dish, chop the boiled eggs, add to the dish, sprinkle with salt and pepper to taste .
