Potato and arugula salad, this healthy salad consists of sweet potato, arugula, pistachio and feta cheese with a delicious lemon sauce that can be replaced with vinegar and is easy to prepare where it is ready in just 10 minutes .

  • 4-5 cups arugula
  • 1 cup boiled sweet potatoes
  • 3 Tbsp feta cheese
  • 2 tbsp milk pistachios
  • 2 boiled eggs
  • Salt and ground black pepper to taste
  • To prepare the sauce
  • 1 clove of garlic mashed
  • 1 teaspoon mustard
  • 2 tbsp lemon juice or vinegar
  • ½Teaspoon salt
  • ½Teaspoon ground black pepper
  • 6 tbsp olive oil

Method of preparation

  1. We put the sweet potatoes in a saucepan, immerse them in water and boil them . In a large bowl, mix watercress, boiled sweet potatoes, feta cheese and pistachios .
  2. Before serving, begin by sauce, creating each of the garlic, mustard, lemon juice, salt, pepper, olive oil, and stir until ingredients are completely combined .
  3. Add the sauce that we have prepared and stir until all the ingredients are well combined . Put the salad in a serving dish, chop the boiled eggs, add to the dish, sprinkle with salt and pepper to taste .
