
Tomato and cucumber salad, a light refreshing salad for hot summer days. And if you add to it beans become a full meal for vegetarians, basil can be replaced with parsley or mint .

Ingredients
- 1 tomato, chopped
- 1 cucumber chopped
- ½Cup of chopped red onion
- ½Cup of filtered canned beans
- 2 tablespoons chopped fresh basil
- ½Cup of apple cider vinegar
- Salt and pepper to taste
Method of preparation
- In a large bowl, mix the tomatoes, cucumbers, red onion and beans and basil.
- And just before serving put vinegar, salt and pepper.
- Serve with meat and chicken dishes .
