The way of making battissier cream is easy

Cream patisserie or Pasteur cream or custard cream tastes very tasty and is used in many recipes such as tart, eclair and others and is one of the main ingredients that add the distinctive flavor of the sweets and here is the original way to prepare them .

  • Preparation time: 5 minutes
  • Cooking time: 20 minutes
  • Total time: 25 minutes


  • 2 egg yolks
  • 1 cup liquid milk
  • 1 tablespoon butter
  • 2 tablespoons corn starch
  • ½Teaspoon vanilla
  • ½Cup of white sugar

Method of preparation

  1. Put the milk in a deep saucepan over low heat with vanilla, stir and bring to a boil and bubbles appear .
  2. Put the eggs in a bowl, add sugar and starch on top and whisk the ingredients with a hand whisk until well combined .
  3. Put the egg mixture on top of the milk and continue stirring over low heat until it becomes heavy .
  4. Before we turn off the fire add the butter and continue whisking until completely melted .
  5. Turn off the fire and let the cream Patisserie cool completely and then ready to use in any dessert recipe you prefer .
