  • 3 cups whole milk (preferably uncooked)
  • 3 cups half & half cream (milk with cream)

Method of preparation

  1. Put in a deep saucepan both milk and half & half cream and bring to a boil over medium heat, stirring constantly, and add a pinch of sugar .
  2. Add lemon juice, then neroli water and dice water and stir the ingredients together well .
  3. Using a perforated spatula we collect the curdled cream on the surface and set it aside in a colander .
  4. We repeat the process until the milk appears without any coagulation on its surface .
  5. When cool skimming that we set aside at room temperature until ready for use with katayef age and other Arabic sweets .
